I love fish fingers but do not love the processed batter that it is often enveloped in. This healthy version gets the thumbs up from the partner and my taste buds, and is best served hot with yummy home-made, healthy tartar sauce. I highly recommend having this with my home-made tartar sauce. Experiment with various types of fish until you find one that hits the spot for you.
Ingredients
2 fillets of wild caught white fish (such as cod, snapper, barramundi or king fish)
2 large eggs, whisked
1 cup ground almonds (or almond flour)
1 teaspoon himalayan salt
3 tablespoons coconut oil or ghee
1 tsp coriander
2 tsp ground black pepper
1/4 tsp cayenne
Method
- Rinse fish fillets in cold water and set on a plate
- Cut fish into medium sized sticks, following the lines of the fillet
- Place whisked eggs in one dish and flour, salt, pepper and spices in another
- Dip fish sticks in egg, then flour mixture. Set aside on a plate
- Heat 3 tablespoons oil in a large frying pan over medium-high heat
- Place half the the fish sticks in the pan, leaving enough room around them so that they aren't crowded
- Cook for a few minutes on each side, until well browned, then remove fish sticks to a plate lined with a paper towel
- Add more oil to frying pan if needed and cook the remainder
- Serve with home-made tartar sauce.
