Baked Jalapeno Trout

Did you know that Jalapenos are a good source of antioxidants? They contain a compound called capsaicin which is a known anti-bacterial, cancer and diabetes preventative nutrient. This meal is quite a spicy number which also has brain, heart and bowel protective healthy fats from the trout. Enjoy it with a side of leafy greens, veges, puree's or cauli mash.

Ingredients

1 tbsp jalapeno peppers

2 fillets of trout or salmon (wild caught)

1 clove garlic

1 tbsp rosemary (fresh or dried)

2 tsp cracked black pepper

1 tbsp coconut oil

 

Method

Pre-heat oven to 200 degrees.

Grind jalapeno peppers, garlic, rosemary and coconut oil in a mortar and pestle or food processor.

Spread jalapeno mixture over the trout or salmon and bake in a baking dish lined with baking paper for 20 minutes. (or less depending on size of fish)

Enjoy with Sautéed kale and Pumpkin and Carrot Puree.
