Carrot Cauli and Avo Mash

Ingredients

1 large carrot, cut into small chunks

1/2 large head of cauliflower, cut into small chunks

1 medium avocado

1/2 tsp ground mustard (you can also use cumin or coriander instead)

1 tsp himalayan salt

1 tsp cracked black pepper

1 tbsp coconut oil (or ghee or organic butter)

 

Method

Steam cauliflower and carrot until very soft. I like to use a steamer in a saucepan, covering the top with a lid.

Discard all the water and place the cauliflower and carrot back in saucepan.

Add remaining ingredients and blend using a hand held stationary blender until smooth and creamy.

Serves 3-4 as a side dish.

The perfect accompaniment to roast chicken, meatloaf fuel, salmon...everything really. 🙂
