Cauliflower Infused San Choy Bow

Fancy a fun, tactile dish that is easy on the belly, packed full of quality protein and vegetables and tastes delish. Look no further folks, this is my yummy take on san chow bow. Great for big and small kids. I like to have mine with Hot and Spicy Capsicum Sauce.

Ingredients

500g grass fed mince (lamb, beef or chicken). You could also use sustainably caught wild fish 2 x 200g (salmon, trout, sardines, herring) Good brands are Fish4Ever and Good Fish.

2 large shallots, sliced finely

1 tsp cumin

1/2 tsp cayenne

1 tsp turmeric

1 tsp himalayan sea salt

1 clove garlic, crushed

1/2 head cauliflower, chopped

1/2 onion, sliced finely then chopped roughly

1 tbsp grass fed butter, ghee or coconut oil

1 head of organic lettuce (iceberg works well)

 

Method

Chop cauliflower into small chunks.

Process cauliflower in a food processor until it resembles rice.

Heat spices in a large frying pan on high heat for a couple of minutes until spices release an aroma.

Add butter or oil, onion and garlic and sauté until onions become translucent.

Add cauliflower, mince and shallots and cook covered for 10 minutes.

Separate lettuce leaves from lettuce head and wash thoroughly. Pat dry with clean dish cloth.

Serve lettuce cups with mince and cauli mixture.

I like to use hot and spicy capsicum sauce as a dressing.

 

Makes 8-10 lettuce cups
