A salad that is rich in fiber, natural prebiotics and antioxidants. Delicious and so easy to prepare. A fantastic accompaniment to all protein sources. (poultry, fish, lamb, beef, kangaroo, pork, organic tofu etc)
Ingredients
1/2 head of red cabbage
1 medium red onion
1 medium carrot
2 tbsp Apple cider vinegar
1/4 cup olive oil
1 tsp Himalayan salt
1 tsp cracked black pepper
1/4 cup kale, finely sliced (optional)
Method
Slice red cabbage and onion finely with a mandolin or sharp knife. Place in large bowl.
Grate Carrot into bowl.
Add remaining ingredients.
Mix well
Serves 4-5 as side dish. Stores for up to a week in fridge
