The photo may not look pretty but believe me this meatloaf is the answer to your "I am too busy" to eat healthy problems. It's a complete meal, packed full of protein, healthy fat, fiber and vegetables. I have this delicious specimen for dinner with cauliflower mash or store it in an airtight container and have it for a healthy breakfast on the go or with salad/vegies for lunch. No time to eat well....please 🙂
Ingredients
500g organic grass fed mince (lamb or beef)
½ cup sunflower seeds, ground
¼ cup chopped fresh parsley
½ large carrot, grated
½ large zucchini, grated
½ large white onion, sliced
3 organic eggs
½ cup broccoli, steamed and chopped (optional)
6-8 sundried tomatoes, chopped roughly
1/4 cup chopped parsley
1 tsp paprika
1 tsp Himalayan salt
1 tsp Ground black pepper
1 tsp Coriander seeds, crushed (optional)
1 tsp Turmeric
Method
- Pre-heat oven to 200 degrees.
- Whisk eggs in a large bowl using a fork or whisk.
- Add remaining ingredients and combine well. If adding broccoli, steam lightly, then add to mixture.
- Pour mixture into a baking tray lined with baking paper.
- Bake uncovered for 50 minutes. Check to see if cooked by driving a skewer stick down the centre of the tray. If stick is clean once removed meat loaf is done. If not, place back into oven and cook a further 10minutes.
Serves 6-8
Turmeric Cauli Mash
Extremely easy to make and always a winner when served to guests. You can hardly tell that this mash is potato-free.
Ingredients
1/2 cauliflower head, chopped into small chunks
2 tbsp coconut oil or grass fed organic butter (duck fat or olive oil can be used instead)
1-2 tsp turmeric powder
1 tsp Himalayan salt
Cracked black pepper to liking
Method
- Steam cauliflower in a medium pot for 10 minutes until soft.
- Discard the water.
- Add oil or butter, salt, pepper and turmeric.
- Blend until smooth and creamy, using a hand held blender or a potato masher.
