Slow cooked soups are a great way to get many nutrients in the one hit. This soup is a great meal for the cooler months. It's packed full of gut loving fibre and ingredients that support healthy detoxification. The nutritional yeast is an inactive yeast so will not cause Candida. In fact this yeast adds a cheesy flavour and many vitamins and minerals such as B 12, protein and fibre.
Ingredients
1 whole cauliflower, chopped into small chunks
2 cloves garlic, minced
1 cup spinach, chopped
2 tbsp fresh thyme (or 2 tsp dried)
2 tsp himalayan salt
2 tsp cracked black pepper
1 cup mushrooms, chopped
2 tsp turmeric
1 tbsp ghee
2 tbsp nutritional yeast (I use the brand Bragg's)
1 medium onion, chopped
200g grass fed beef mince or lamb (Optional)
Method
- Heat herbs, spices, onion, garlic and ghee in a slow cooker (or large casserole pot) until aromatic
- Add remaining ingredients and toss well to combine
- Slow cook for 4-5 hours
- Using a hand held blender, blend all ingredients until resembles a creamy, soup consistency
- Dish up and enjoy.
Serves 3-4
Note - make extra, store in the fridge and re-heat for a quick, nutritious meal the next day.
