A quick and easy recipe that can be used as a healthy snack or as a protein source for salads and main meals. Who doesn't like easy?
Ingredients
1 tbsp of coconut oil or ghee
6 chicken drumsticks (organic)
2 tbsp lemongrass, chopped
1 tbsp shallots, chopped (optional)
1 tbsp garlic, crushed
1/2 tsp, chilli flakes
1 tsp himalayan salt
1 tsp black pepper
Method
Pre-heat oven to 200 degrees celsius
Smother chicken drumsticks with herbs, spices and oil
Place drumsticks onto a baking dish lined with baking paper
Place in oven and bake for 30-40 minutes until golden brown and cooked through
Serves 6
