Sautéed Broccoli and Mushrooms

Such a simple dish that marries well with any protein, wild fish, poultry, red meat, organic tofu etc. From cholesterol lowering to high in fibre and supportive to detoxification what is not to love about broccoli? Ingredients

1 1/2 heads of broccoli, cut into florets

1/2 brown onion, chopped roughly

1 cup sliced mushrooms

1 clove garlic, crushed

1 tsp turmeric

1 tsp sweet paprika

2 tsp oregano

1 1/2 tsp himalayan salt

2 tsp cracked black pepper

2 tbsp coconut oil (grass fed butter or ghee)

1/4 cup home-made bone broth (or 1 tbsp extra coconut oil)

 

Method

Place herbs, spices, salt, pepper, onion, garlic in a large frying pan.

Saute on high heat for 1-2 minutes, tossing occasionally until spices are aromatic.

Add coconut oil or chosen fat and remainder of ingredients. Stir well, cover with lid and leave to cook for 5 minutes on medium heat.

Add bone broth or an extra tablespoon of coconut oil and leave uncovered to cook for a further 3 minutes.

 

Serves as a side dish for 3-4
