Spicy Meatballs

I am a massive fan of the humble meatball. When created with healthy ingredients, meatballs can be an excellent answer to a protein source for lunch or as an accompaniment to your veges for dinner. Heck, why not whip up a few, freeze them and use it (along with vegetables) as a quick breakfast option.

Ingredients

500g grass fed lamb mince (beef or pork can be used)
1 tsp himalayan salt
1 tbsp ground black pepper
1 clove garlic, crushed
1 tbsp caraway seeds
1 tsp cayenne powder
1 tbsp mustard powder
1/4 cup finely chopped parsley leaves (or coriander leaves can be used)
1 large egg

 

 

Method

Preheat oven to 100 degrees.
In a large bowl mix all of the ingredients together and knead until well combined.
Line a baking tray with baking paper.
Roll about 1 tbsp of the mixture into a ball and place onto the baking paper.
Continue to do this until all of the mixture is used.
Bake in oven for approx 20 minutes until balls are golden brown and cooked through. (You can also sauté in a frying pan on medium heat for 10-15 minutes, until cooked through)
