I am always looking out for healthy, easy to prepare and delicious breakfasts I can make in advance and have on the go. This brekky is packed full of healthy protein, fats and quality protein. The creamed coconut and vanilla adds a subtle sweetness and powerfully protective antioxidants. The perfect meal to start the day with really 🙂
Ingredients
2 tsp creamed coconut or coconut butter (made from coconut meat)
1 tbsp hemp seeds (you can also use a quality protein blend like 180nutrition superfood protein vegan coconut)
1 tsp cinnamon powder
1/2 tsp vanilla bean powder ( I use organic vanilla bean)
1/2 ripe pear (or 2 tbsp blueberries or honeydew melon for low FODMAP)
1 tsp chia seeds
1/4 cup baby spinach leaves (optional)
1/4 cup purified water
1 tbsp coconut flakes for sprinkling on top (optional)
Method
Blend all ingredients together except for coconut flakes.
Place in small bowl and refridgerate overnight.
Sprinkle coconut flakes on top.
Enjoy for breakfast.
